The drop off day is Monday, July 31st! I baked the spiced plum pie for my family and it was the best of my practice plum pies. I was hoping to do one more savory tart, but time is running short, so I'm trusting that my two practice runs are enough.
The coconut cream pie is a wild card. I've made it twice in the last two months and they've turned out great. My only problem is that I have a tendency to overwhip my whipped cream, so I'm thinking I may just whip it by hand.
I have a lot of baking to do Saturday and Sunday, but I'll try to write about the process this weekend.
