The biggest pie day of my year is almost here and I’m making plans! In addition to the pies for family Thanksgiving, I auction three pies in the fall at my UU church, so I have those on the schedule to bake in the coming weeks. This is what I currently have planned:
Thanksgiving Day pies:
Pumpkin Pie
I’m not a huge fan of pumpkin, but I know it’s a classic, so I am doing a pretty traditional pumpkin pie. My very modest goal is to not crack my pumpkin pie this year.
Pecan Pie
A couple of years ago, I tried a pecan pie with maple syrup and last year I did a pecan pie with bourbon in it. I didn’t love the maple syrup, and this year I am sticking to the recipe on the back of the Karo bottle, which is what I’ve been making since I started helping my mom bake the Thanksgiving pies when I was little. If there are no leftovers of the Pecan Pie, I’ll have to make a second to bring to my dad over the weekend. It’s his favorite and it’s mandatory that I bring him some.
Apple Pie
I have considered a lot of potential variations on apple pie (adding caramel, cranberries, etc.), but I’ve decided to keep it pretty traditional. I’m putting some rye flour in the crust and the crumble, but that’s it.
Pistachio Cream
This is where I admit that I don’t really love any of the traditional Thanksgiving pies. I don’t hate them and I definitely eat all of them, but none of them are my favorite. So I take the opportunity to do something a little different when I can. Last year I did a cranberry pie. This year I am doing pistachio cream. Instead of the traditional all buttah crust I usually do, I’m thinking about doing a brown butter press in cookie crust (it’s this crust but with brown butter).
More Pie!
In addition to Thanksgiving pie, I’m doing a pie for delivery to the winner the Tuesday before Thanksgiving. TBD on what kind of pie, the winner is polling his family. Then I have another pumpkin pie to deliver the first weekend in December. That’s a lot of pie in two weeks!
