A Thanksgiving Dispatch from the Pie Road
I've made five pies since Monday and I am glad to be in the final stretch!
First, I decided to do a pumpkin chiffon pie instead of apple, so now we'll have a regular pumpkin, a pumpkin chiffon, a pecan and a pistachio cream. Second, I did an apple pie for an auction pie.
The pumpkin and pecan are baked, the pumpkin chiffon and pistachio cream are made. I'll make the whipped cream and assemble tomorrow morning.
For the cold set pies, I did brown butter press in cookie crust, which was pretty easy and also very delicious. Here are a bunch of pictures of the process and the components.
