I did my next bake on Friday night! It was Sweet Corn Spoonbread. If you haven’t had it before, it is a light and fluffy cornbread - very similar to a souffle. As I said in my last post, my last couple bakes didn’t come out great, so I was a little nervous about something I had never done before. This turned out great! The flavor was a little corny, the texture was light and fluffy. I did like it a lot, but I prefer cornbread.
This was a pretty easy bake. It started with an easy batter and then folded in egg whites. If you haven’t done a folding technique before, it is a very delicate technique. Here is a video showing how to do it properly. After I popped the spoonbread in the oven, I read a note in the recipe that underfolding it can lead to separation. I was concerned that I had done that, but it didn’t separate, so that was a relief!




The instructions were to bake at 350 degrees for 30-35 minutes. I ended up baking this for closer to an hour (not sure about the exact time because after 35 minutes, I did it in 2-7 minute increments).
I’m relieved that this went well! Hopefully my baking luck is turning around.

"Easy bake" and "folding" is an oxymoron. Easy for me means dump everything in a bowl, mix, stir, and pour it in to a pan, throw it in the oven and voila, it's ready! LOL Your stuff always looks so yummy!
